Fast Beef Pho

4 cups beef bone broth

3cm piece ginger, finely sliced 4 whole star anise

3 tbsp fish sauce

375g rice vermicelli, cooked 400g beef steak, very thinly sliced GARNISHES

Coriander and vietnamese mint Mung bean sprouts

Thinly sliced spring onions Sliced red chilli, to taste

Lime wedges, to squeeze over

Heat broth in a pot; add ginger, star anise and fish sauce. Simmer for 10 minutes until fragrant. Strain broth and serve with noodles in large bowls, topped with steak (it will cook in the hot broth) and garnishes. Serves 4
