SMALL BITES:

Bone broths are popular to sip as a tonic or use in cooking because they are a rich source of protein, collagen and nutrients. Animal marrow bones, connective tissue and pure water is slowly simmered for 24-48 hours to extract all the collagen, amino acids and goodness from the bones. You can buy it ready-made or to make your own nutritious broth, it’s best use a variety of bones, such as oxtail, marrow bones and gelatinous knuckles. Adding a splash of vinegar is important as it helps draw all the valuable nutrients out of the bones. The resulting nutritious stock is commonly used in soups, sauces, stews and gravies. Due to its many possible benefits – it may strengthen bones, reduce inflammation and aid the digestive system – bone broth has also gained popularity as a health drink and can be added to smoothies.
