Kimchi Corn Fritters

Canned corn kernels, kimchi, free-range eggs, flour, baking powder, salt

Mix 2 x 410g cans corn kernels, 120g kimchi and 2 large whisked eggs in a bowl. Add 1 cup flour, 1 teaspoon baking powder and 1 teaspoon salt; mix well. Heat 1-2 tablespoons olive oil in a pan. Use icecream scoop to add portions of batter to the pan. Cook for 2 minutes on each side or until golden. Serve with bacon, avocado salad and sriracha sauce (optional). Serves 4
