Gochujang (pronounced go-chu-jang), is a traditional Korean chilli paste. Its intense chilli heat is tempered by the sweetness of glutinous rice, while fermented soybeans add an unmistakable umami flavour. It’s sweet, pungent and savoury all at once. Once tried, this veritable flavour bomb is an ingredient you’ll want to keep on hand. With the same consistency and intensity as miso paste, it’s similarly versatile. Stir some through soups, noodles, marinades or even pasta sauce. Blend with tomato sauce to make a piquant dip for French fries. Thin with olive oil and toss through vegetables before roasting. Mix a little into scrambled eggs or use to instantly elevate mayonnaise. It’s the perfect magical ingredient that will enhance many dishes with added taste highlights. You’ll find it in Asian food stores; it will last for up to three months, stored in the fridge.
