Chicken Margherita

This dish is a play on the flavours of a margherita pizza but the topping ingredients adorn roast chicken breasts. It’s as quick to put together as a pizza topping and tastes just as delicious.

Olive oil

4 large chicken breasts (skin on or off,

as preferred)

500g cherry tomatoes

½ cup green olives

2 tablespoons chopped fresh oregano Juice and finely grated zest of 1 lemon 4 slices mozzarella cheese

½ cup basil pesto, to serve

¼ cup fresh basil leaves, to garnish

Preheat the oven to 190°C.

Heat a little oil in a large ovenproof baking dish or frying pan. Season the chicken on both sides with salt and pepper. Cook the chicken for 2 minutes on each side, to lightly brown.

Scatter the tomatoes, olives and oregano around the chicken. Drizzle generously with oil, scatter with lemon zest and juice, and season with salt and pepper. Roast for 15 minutes or until golden brown.

Remove the pan from oven and top each chicken portion with a slice of mozzarella. Return the chicken to roast for 5 minutes more.

Serve topped with pesto and with the pan juices. Garnish with basil leaves before serving. Serves 4
