Date & Apple Bake

3 medium apples 1 cup pitted dates, roughly chopped 2 tablespoons orange marmalade ½ cup desiccated coconut ½ cup soft brown sugar 35g melted butter 1 large free-range egg, lightly beaten ¾ cup self-raising flour

Peel and core the apples then thinly slice and place in a bowl. Add the dates, marmalade, coconut, sugar, butter and egg. Stir to combine then gently mix through the flour. Spread mixture into a paper-lined 20cm square cake tin. Bake at 190°C for about 35 minutes until golden brown. Serve warm with caramel sauce. Serves 8-9
