Candied Yams with Miso Butter
Miso paste adds a wonderful umami flavour to these honey-glazed yams. They're great served with roast meats and greens.
500g 1 tablespoon yams olive oil
2 teaspoons honey
¼ cup butter, softened
2 tablespoons miso
1 clove garlic, finely chopped
Preheat the oven to 200°C. Line an oven tray with baking paper.
Place the yams on the lined tray and drizzle over the olive oil. Bake for 25 minutes.
Remove the yams from the oven, drizzle over the honey and gently toss to coat. Return to the oven and bake for a further 5 minutes, or until golden brown and cooked through.
In a small bowl, combine the softened butter, miso paste, chopped garlic and season with salt and pepper. Spoon over the yams then return to the oven for a further 3 minutes before serving. Serves 4
