Avocado storing tips:

Keep ripening avocados in a fruit bowl with other fruit – bananas, in particular, will speed up ripening. Avoid storing unripe avocados in the fridge or they can develop brown spots and threads through the flesh. When using only half an avocado, keep the stone in the other half and store in an airtight container in the fridge – this will keep the avocado fresh for up to a day. If you have excess avocados on hand, mash with a squeeze of lemon or lime juice and pinch of salt, then scoop into a container, cover the surface with a thin film of olive oil and freeze for up to three months – thaw to use as a spread or dip.

Avocado, Green Pea & Feta Dip:

This simple dip can be served with crackers and vegetable sticks, or used as a spread in wraps or sandwiches. To a food processor bowl, add the flesh of 1 ripe avocado, 1 cup fresh or frozen (half-thawed) green peas, 70g goat or cow feta, 2 tablespoons extra virgin olive oil, juice of half a lemon or lime and 2 tablespoons chopped fresh coriander, parsley or mint. Blend for 1-2 minutes until smooth. Season with salt and pepper to taste. Scoop into a bowl, serve with crackers and vegetable sticks.

Simple Guacamole:

Served with chilli beans, this is a family favourite when avocados are in season. Scoop the flesh of 1-2 ripe avocados into a bowl, add the juice of 1 lime and mash until smooth. Peel a clove of garlic and place onto a chopping board with a generous pinch of salt. Roughly chop then use the flat side of the knife to squash the garlic and salt together into a smooth paste. Add to the avocado and combine. Season, then serve immediately.
